To delete a WhatsApp contact, you need to use the Android or iOS mobile app instead of the web and desktop app. On Android, open the WhatsApp chat with the contact you want to delete -> tap contact name at the top -> three-dot icon -> view in address book -> three-dot icon in Phone app -> Delete. Meanwhile, on iOS, once you access the profile details of the WhatsApp contact through the profile bar -> tap on Edit -> Delete contact. Note that this deletes the contact from your phone's address book, and there's no way to directly delete the WhatsApp contact from the messaging service itself.
